Thyme Roasted Potatoes


2 pounds baby potatoes, halved

2 tablespoons olive oil

2 tablespoons fresh thyme leaves

Salt and pepper to taste



  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, toss the potatoes with the olive oil, thyme leaves, salt, and pepper until evenly coated.
  • Spread the potatoes out in a single layer on a baking sheet.
  • Roast in the oven for 30-40 minutes or until golden brown and crispy.
  • Serve hot as a side dish.
