INGREDIENTS

Cottage cheese - 250g, crumbled

Ginger - 2 tbsp, minced

Garlic - 2 tbsp, minced

Olive oil - 3 tbsp

Sliced onion - 1/4 cup

Sliced tomatoes - 1/4 cup

Sliced green peppers - 1/4 cup

Fresh mint leaves - 10-15 leaves

Fresh basil leaves - 5-6 leaves

Cumin seeds - 1 tsp

Green chillies - 1 tsp, minced

Salt and pepper - to taste

Multigrain bread - 2 slices
PROCEDURE

In a large fry pan over medium-high heat, add olive oil. Saute cumin seeds until they turn aromatic.

Once the pan is warm, add in sliced onions, minced garlic and ginger and allow these to caramelize for around 1 minute.

Once the onions turn slightly golden brown, add in the green chillies and tomatoes. Saute the tomatoes until they turn soft.

At this stage, add in the salt & pepper along with the crumbled cottage cheese and mix gently.

Cover the pan and let it simmer on low flame for around 3 minutes.

Add in the fresh mint and basil leaves and mix gently.

Turn off the heat and serve the cottage cheese scramble over multigrain toasts
